Cinnamon Honey Butter

My parents live in the beautiful Hudson River Valley where there are over 650 farms producing dairy, fruits, vegetables, flowers, hay, sheep, goats, horses and more. They are lucky enough to have access to a local farm cooperative called Hudson Valley Fresh [1] which is committed to sustainable agriculture. All the farmers that are a part of Hudson Valley Fresh adhere to very strict local standards in cow-care and their hormone-free dairy products taste simply divine. The last time I was home I tried their Cinnamon Butter and I was hooked. I’ve been dreaming of it since, so I spent this morning hunting for a recipe to try to recreate it. After a bit of searching, I found an Ina Garten [2] recipe for Cinnamon Honey Butter. I made a few modifications and it came out great.

Prep Time: 10 mins

Ingredients:
1 stick organic unsalted butter
1/2 teaspoon good ground cinnamon
2 tablespoons honey
pinch of salt

Bring butter to room temperature. Place butter, cinnamon, honey and salt in an electric mixer fitted with the paddle attachment. Mix on low until blended. Turn off mixer and give it a good stir with a rubber spatula. Mix again until completely combined. Serve with toast and store remaining butter in a tightly sealed container in the fridge.

When we were spreading this INCREDIBLE butter on the bread my kid could not stop talking about how good it smelled. It is so unbelievably heavenly. I can already feel myself getting fat.
