My freshman year college roommate was recently in Los Angeles for business and we were lucky enough to have her as a house guest. My kid just loves when people stay over. He was scheming before she even got here and upon her arrival he immediately start whispering meal ideas in my ear.

To my surprise he suggested we make mini turkey burgers with avocado stuffed into them. I honestly have no clue where this idea came from but I wasn’t going to stand in the way of a budding Iron Chef.

I wish I could end this post with a cute story about how much my college roommate loved the meal, but the truth is that she had a business dinner and wasn’t even here to try it. I suppose we’ll need to plan better for her next visit. Now for the recipe…

Open Face Avocado Melt Recipe

Prep Time: 10 minsĀ  Cooking Time: 6 to 8 mins

Ingredients:
1 pound ground turkey meat
2 to 3 tablespoons Italian bread crumbs
1 egg
ketchup
salt & fresh ground pepper
1 ripe avocado, peeled, cut in half + sliced
5 slices cheddar cheese, halved
10 mini burger buns

Preheat the oven to 350 degrees. Line buns up open on a cookie sheet. In a medium bowl combine turkey, bread crumbs, egg and a few squirts of ketchup. Mix together and add salt and pepper. Form meat into 10 mini patties. Heat up a large non-stick frying pan on medium-high until hot. Sprinkle water on the pan. When it sizzles, it’s hot. Place the patties in the pan (as many as will fit) and cook on one side for 3 mins. Flip the patties cook for 2 to 3 more minutes or until done. Remove from pan and let rest for 5 minutes then carefully slice each mini burger in half forming two thin patties. Place one half of each patty on top of each side of the bun. Top with avocado and cheese slices and cook in oven for a few minutes until cheese melts. Makes 10 open faced avocado melts. (20 halves!)

    This reminds me of a recent recipe that my 4-yr-old daughter came up with. We were having grilled cheese sandwiches with veggies for dinner, but she didn't want that. Instead, she asked if she could have a grilled mac & cheese sandwich. We had left overs from the homemade mac & cheese the night before, so I put it in between two slices of garlic/olive bread from the bakery, and it grilled up so nicely. I'll have to send you some pics. It was very yummy!!! (I love your blog, btw. This is my first time posting a comment.)
