Quick Quinoa & Corn Saute
We had a lot of left over corn on the cob from the BBQ this past weekend so last night we turned it into this yummy side dish. I used a little creativity to get my kid to try it… I told him it was “red cous cous.” Then I told him red cous cous is called quinoa. Worked like a charm.
Quinoa is the perfect compliment to corn because it is light and fluffy and has a slightly nutty flavor. It’s also high in protein which makes it a much healthier side dish than cous cous or pasta. Now for the recipe…
Quick Quinoa & Corn Saute Recipe
Prep Time: 5 mins Cooking Time: 20 mins (mostly unattended)
Ingredients:
1 cup quinoa
2 cups water
2 ears of corn
1 tablespoon olive oil
1 tablespoon salted butter
1 clove garlic (pressed)
1 teaspoon smoked paprika
salt & fresh ground pepper
Rinse quinoa thoroughly. Bring quinoa and water to a boil. Turn down heat, cover and let simmer for approximately 15 minutes or until all water is absorbed and the germ ring is showing on the quinoa. Meanwhile, use a sharp knife to remove corn kernels. Heat olive oil and butter in a large pan on medium heat. Add garlic and cook for 2 minutes. Pour in corn kernels and saute until corn begins to look slightly roasted. Turn down the heat to medium-low and add cooked quinoa. Season with paprika, salt and pepper and serve warm.
