Smokey Corn Saute
My dear friend and business partner, John, recently suggested I purchase some smoked paprika for use in a few recipes on the blog. He said I’d love the smokey flavor and that it would be mild enough for my kid. So far he’s 1 for 1 because this dish is both kid friendly and mom approved. I’m sure it will taste even better in the summer when the corn is extra sweet.
Ingredients: With a very sharp knife, cut the corn kernels off the cob. Heat olive oil in a frying pan over medium heat. Add kernels and saute until they begin to look brown and toasty. Add paprika and sea salt and fresh cracked pepper to taste. Serve hot.
4 ears of corn (shucked)
2 tablespoons olive oil
1 to 2 teaspoons smoked paprika (be sure the paprika is SMOKED)
sea salt and fresh pepper
