Last summer while visiting family in southern Oregon all the ladies went to lunch at C St Bistro and I had the most amazing Asian pulled pork sandwich. I went back to Oregon over the holidays and it was closed; devastation.

I can’t stop thinking about this sandwich so I am going to recreate it. And this is the perfect week because over at The Naptime Chef and Small Kitchen College they’re having a slow cooker challenge.

After scouring the web for inspiration for my own asian pulled pork and Banh Mi sandwiches (what this sandwich is based on) I’ve come up with my own version of deliciousness.

Slow Cooker Asian Pulled Pork

2 1/2 lbs pork butt or shoulder trimmed

1/2 cup low sodium chicken broth

1/4 cup low sodium soy sauce

1/4 cup fresh lime juice

1 teaspoon fresh grated ginger

Place the pour in slow cooker. Combine all the other ingredients and pour over the top of the pork. Cook on low for 7 hours or on high for about 4 hours.

Pickled Diakon Radishes and Carrots thank you white on rice couple

1 daikon radish

2 carrots

1 cup warm water

2 tablespoons rice vinegar

1 1/2 tablespoon sugar

1 tablespoon salt

Using the large side of a grater shred the carrots and diakon radish. Combine the water, vinegar, sugar and salt until dissolved. Pour mixture over the carrots and radish and stir to combine.

Asian Pulled Pork Sandwich or Banh Mi

Mini baguet

thai sweet chili sauce

cuccumber ribbons

green onion

cilantro

Pulled pork and picked radishes and carrots from above.

Slice the bread, brush with canola oil and place on heated griddle until toasted. Spread on a layer of Thai sweet chili sauce onto each side. Place pork onto the bottom piece of bread followed by the pickled radishes and carrots, cucumber ribbons, green onion, and cilantro. Cover with the top of the roll and serve with kale chips.

    Great recipe — esp the carrot/cucumber dressIng as it needed the sweet addition. So am new to slow cooking — could you cook the pork in advance and then let the fat chill/skim it off to make this dish a bit healthier?
